U intervjuu, dr Maja Pauni\u0107 sa Prirodno-matemati\u010dkog fakulteta u Novom Sadu opisala je meso raka kao blagog, prijatnog i autenti\u010dnog ukusa. Istra\u017eivanja u okviru projekta DANUBEcare pokazala su da je meso bezbedno za konzumaciju, karakteri\u0161e ga velik sadr\u017eaj proteina, mali sadr\u017eaj masti i povoljan profil masnih kiselina. Dr Pauni\u0107 je tako\u0111e istakla zna\u010dajan potencijal upotrebe lju\u0161ture raka u stvaranju jedinstvenih kulinarskih proizvoda.
